During the stress of finals week, every college student is tempted to just heat up some Top Ramen or just skip eating altogether. I’m here to tell you, you are worth more than that. Here are some quick and healthy meals to get you to fight through finals.
Greek Yogurt and Granola
This delicious and simple meal will fill you up while prepping for your tests and projects. Chockfull of fiber, calcium, and protein, yogurt, and granola only take one minute to put together. Drizzle a touch of honey for added sweetness and antioxidants.
–1/2 cup of Greek yogurt
–1/2 cup of granola
–combine ingredients
–Drizzle of honey
Peanut Butter Toast
Just pop a slice of bread in the toaster and spread on some peanut butter. Voilà! You have an easy breakfast that will sustain you through the morning cram sessions. The carbohydrates of the toast and protein of the peanut butter can prevent you from getting hungry quicker. If you’re feeling fancy, I recommend adding banana slices to the toast.
–Toast 1 slice of whole wheat bread
–Spread 1 tablespoon of peanut butter on toast
–Top with 1/2 of a sliced banana
Microwave Vegetarian Burrito Bowl
This can be made in about five minutes. Even better, it can be made in the microwave. To make this fast, use pre-cooked rice that can be cooked in the microwave. This healthy at-home alternative to Chipotle will be a lifesaver when you are tempted to reach for a frozen boxed dinner.
–Prepare 1 cup brown rice according to package instructions
–In a microwave-safe bowl, combine rice, 1/2 cup black beans, 2 tablespoons of salsa, 1 tablespoon of shredded cheese
–Microwave on high for 45-60 seconds
–Finish by adding toppings like diced avocado, diced tomato, or crushed tortilla chips
Quiche in a Coffee Cup
Another dish you can create a microwave. This meal takes no longer than 3 minutes and works for either lunch or dinner. I know eating is sometimes the last thing on a student’s mind during finals week, but with a dish as quick and delicious as this one, there is no excuse to deprive yourself of food. Trust me, going through finals on an empty stomach never ends well.
–In a microwaveable mug, add one egg, 1 1/2 tablespoons of milk, 1 teaspoon of melted butter, salt, and pepper
–Whisk the ingredients together
–Add 1/2 slice of torn bread, 1/4 cup of spinach and 1 tablespoon of shredded cheese (make sure these do not settle to the bottom)
–Microwave on high for 1 minute
